The male of the palm tree produces the sugar palm. Planters collect the sugar palm under a bamboo roof and then process it by boiling it in a pan to make it lumpy. The sticky brown mass is known as palm sugar. Coconut shells are then used to shape the sweet-tasting palm sugar into individual pieces.
