Since 2013, Tebo Regency has been a red dragon fruit center in Jambi. Many districts, including Rimbo Ilir, Rimbo Bujang, Ribo Ulu, and Tujuh Koto Districts, have dragon fruit plantings. The Hylocereus polyrhizus crop, which locals grow in their gardens and yards, is not only sold fresh but also transformed into dodol.

Red dragon fruit dodol is a kind of traditional Indonesian sweet made from red dragon fruit, sugar, and coconut milk. It is a sweet and sticky food, often served in the form of blocks or small pieces. It tastes sweet with a touch of delicious dragon fruit. Dodol red dragon fruit is one of the popular variations of dodol in Indonesia and is often served as a traditional snack.

Here is the recipe for making red dragon fruit dodol

Ingredients

  • 2 pieces of red dragon fruit, the flesh is cut into small pieces
  • 400 grams of sugar
  • 200 ml coconut milk from 1 coconut
  • 2 pandan leaves, conclude
  • 1/4 teaspoon salt
  • Coconut oil for greasing the mold

Instructions

Heat some coconut oil in a greased mold or container, then set it aside. Cook the red dragon fruit with granulated sugar in a saucepan over medium heat. Stir constantly until the dragon fruit becomes soft, and the sugar dissolves.

Add the coconut milk and pandan leaves to the dragon fruit and sugar mixture. Cook over low heat while stirring continuously until the mixture thickens and doesn’t stick to a wooden spoon. This requires patience and takes about 1.5-2 hours.

After the mixture has thickened and is no longer sticky, incorporate the salt and stir until well combined. Following that, withdraw the saucepan from the heat source. Pour the dodol mixture into the greased mold, smoothing the surface. Let the dodol cool until it’s completely set and hardened and cut it into your desired shapes and serve.
