Cocoa bean processing facilities typically process cocoa into cocoa butter and cocoa powder. Cocoa butter is used in a variety of chocolate foods, while cocoa powder is used in a variety of foods and beverages. One kilogram of cocoa beans produces 42-45% cocoa powder and 33-35% cocoa butter.
The factory standards for cocoa beans from smallholder farming are almost the same: 7% moisture content, 90 beans/100 grams, minimal impurities, dark brown beans free of fungus, well-fermented beans, and a few double beans.
